Cedar accent strips in cutting board?

i recently acquired a small load of cedar......maybe 50 board feet. I planed a few pieces to square them up/reveal their grain and was blown away with the color and figure in the wood. it's absolutely beautiful. i know cedar is probably too soft to use to make an entire end grain cutting board, but what about a few accent strips? i use a lot of cherry and walnut in my boards. i think i center strip of cedar would look great. would it be food safe? i know people use cedar planks to grill salmon, so it leads me to believe it's a relatively food safe wood. what say you???
